Monday (Hockey) - Stir Fry (Bok Choy, Golden Beets, Parnips, Tofu & Rice)
DeLancey Original recipe (aka sad veggies I had in the fridge and needed to eat before they went bad stir-fry) - I just chopped up the beets and parnips and stir fried them in coconut oil in the wok (I'd normally use sesame and peanut oil, but I'm out of both!), then I added the bok choy and tofu and added a little soy sauce, some coconut aminos, and a splash of fish sauce and let it cook until the beets were tender. Served over rice
