Recipes:

CARROT SOUP with GARAM MASALA
Serves 6

You can find Garam Masala in Indian markets or at health food stores. It is a combination of coriander, cumin, cinnamon, clove, pepper, bay and several other spices. It is sold in bulk at many of the health food stores and is absolutely worth the effort to find.

Ingredients:
¼ cup olive oil
¾ cup diced yellow onion
4-6 carrots, roughly chopped (peeling optional)
1 small yam, peeled and diced
sea salt and pepper to taste
¾ teaspoon garam masala, divided
3 cup vegetable stock
2 teaspoons fresh lime juice, or to taste
2 tablespoons sour cream or Greek yogurt, plus additional to garnish

DIRECTIONS:
1. Heat oil in a soup pot over medium heat. Add the onion, carrots, yam, ¼ teaspoon salt, ¼ teaspoon pepper, and ½ teaspoon garam masala. Cook for about 15 minutes, stirring frequently.
2. Add the stock and 1 cup cold water and raise the heat to high, Bring to a boil, then reduce the heat to a simmer, partially cover, and simmer until vegetables are tender, about 15 minutes. Remove from heat.
3. If you have an immersion blender, use it to puree the soup. (Otherwise, allow soup to cool slightly and then puree in batches in a blender. Return soup to pot.) Season with lime juice, to taste. And adjust the salt and pepper.
4. Mix sour cream or yogurt and remaining ¼ teaspoon garam masala in a small bowl. Swirl into the soup. Serve hot, garnished with additional sour cream or yogurt. If desired.

Well, we're back.  We had a break from the CSA box back over the holidays and when it started up again, we were just busy and didn't actually plan our meals, but grabbed from the box and made stuff.  On some level, that's nice too, but I honestly think we eat better and have less waste when I plan it out, so here we go again!  We also started getting a monthly meat share with all organic meat, so this might help me plan out how we use that as well.

WARM SWISS CHARD and CHICKPEA SALAD with SUMAC

Serves 4
Sumac is a Middle Eastern spice with a pleasantly sour and rather astringent flavor, but without the sharpness of either vinegar or lemon juice. It is mixed with yogurt and herbs to make a light refreshing sauce. This spice was used by the Romans before lemons reached Europe for its fruity sourness. If you don't have sumac you can use any spice you like-curry goes well with this dish.

1 c. dried garbanzo beans (chickpeas)
1/2 c. olive oil
1 onion, cut into thin wedges
2 tomatoes
1 tsp. sweetener of choice
1/4 tsp. cinnamon
2 cloves garlic, chopped
3 bunches chard
3 Tbs. fresh chopped mint
2-3 Tbs. fresh lemon juice
1 1/2 Tbs. ground sumac

1. Put chickpeas in a large bowl with water and soak overnight. Drain and place in a large sauce pan. Cover with water and bring to a boil, then simmer, covered, for about 1 3/4 hours. Drain when tender and set aside.
2. Heat the oil in a large heavy-bottomed frying pan, add the onion and cook on low heat about 5 minutes or until softened and starting to turn brown.
3. Cut the tomatoes in half and scrape out the seeds with a teaspoon, then dice the flesh. Add the tomato flesh to the onions with the sweetener, cinnamon, and garlic. Cook for 2-3 minutes or until softened.
4. Wash the chard and pat dry. Trim the stems and finely shred the leaves.
5. Add to the tomato mixture with the chickpeas and cook 3-4 minutes until the chard starts to wilt. Add the mint, lemon juice, and sumac. Season and cook for 1 minute. Serve immediately.

Pesto
makes about 1/3 cup (can be easily doubled)

1/2 C firmly packed fresh basil leaves
1 tbsp. pine nuts
1 small clove garlic, minced/crushed
1 1/2 tbsp. grated (quality) parmesan
3 tbsp. good olive oil
salt to taste

Toast pine nuts in a dry skillet over medium heat, shaking pan and stirring often, until they just begin to brown and become fragrant. Remove from pan and cool a bit. Place all ingredients but oil in a food processor and process quickly to make a coarse, grainy paste. With motor running, pour in olive oil slowly (not painfully slowly, just not all at once). Season to taste with salt. Can be used immediately, or refrigerated (place in a jar and cover with a thin drizzle of olive oil, or a piece of plastic wrap pressed against surface of pesto to minimize surface discoloration). Pesto is great with plain old pasta, or grilled veggies and pasta, or, heck, try it on potatoes and green beans!!

GREEN GARLIC SOUP
Being the garlic lover that I am I had to share this recipe - it certainly helps to cure the garlic blues...
Serves 6
Adapted from Chez Panisse VEGETABLES, by Alice Waters

1 lb. green garlic (8-10 stalks)
1/2 lbs. potatoes (Yukon gold, or some other tasty variety)
2 medium onions
1/4 lb. butter (or ghee)
Sea salt
2 quarts vegetable or chicken stock

1. To clean and prepare the garlic, trim the root end and peel away any tough or dirty outer layers. Trim away the dark green portion of the leaves [the part that branches away from the stalk]; the light-green part of the stalk is fine to use [check for dirt though].
2. Cut the cleaned garlic into thin rounds and optionally into half-circles.
3. Peel the potatoes and cut into half-inch cubes.
4. Peel the onions and chop into small dice.
5. Melt the butter in a heavy bottomed pot; add the onion and cook slowly until translucent and tender; season with salt and pepper, then add the garlic and potatoes. Cook these together for 5 minutes, then pour in the stock and bring to a boil.
6. Lower the heat and simmer until potatoes are tender. Check the seasoning.
7. This soup can be served rustic and chunky or pureed - either way it is delicious!

Plum Fruit Leather

Pureé (in Cuisinart) 5 cups of diced, pitted plums. Add 1/4 C honey. Cover a rimmed cookie sheet with plastic wrap; spread puree thinly. Cover with cheesecloth or screen and dry in the sun (or place on dash in car). When dry, roll up and store. [I expect you can probably use this recipe with other fruit -- apricots, strawberries... give it a try!]

Finnish Turnip Casserole (Lanttulaatikko)

serves 6 to 8

6 C diced turnips [again, probably no need to peel, just trim tops, tails, and any blemishes]
1/4 C fine dry bread crumbs
1/4 C cream [avoid "Ultra-pasteurized" - and get organic if you can!]
1/2 tsp. nutmeg
1 tsp salt
2 eggs, beaten
2 tbsp. brown sugar (optional)
3 tbsp. butter

Cook the turnips until soft (about 20 minutes) in salted water to cover. Drain and mash. Soak the bread crumbs in the cream and stir in nutmeg, salt and beaten eggs. Combine with the mashed turnips. Add the brown sugar (if using) to the beaten eggs before adding to turnips. Turn into a buttered casserole dish, dot the top with the butter, and bake in a moderate oven (350 F) for 1 hour or until lightly browned on top.

Mizuna or Tatsoi in Coconut oil with Soy and Garlic

I discovered coconut oil for cooking; this healthy saturated tropical vegetable oil contains large quantities of lauric acid (which is also found in mother’s milk; strong antifungal and antimicrobial properties) and is stable and can be kept at room temperature for many months without becoming rancid. [For more information about this, and lots of other good information, I recommend a book called “Nourishing Traditions – the cookbook that challenges politically correct nutrition and the diet dictocrats” by Sally Fallon.] Anyway, the other thing I like about it other than its healthy qualities, is the fragrance and flavor it adds to stir-fried veggies!

So, have your mizuna or tatsoi washed and standing by (a little water still clinging is good). Melt a spoonful of coconut oil in a large skillet or wok over medium-high heat (it smells great!); crush a clove of garlic into the fat and stir/sizzle a few moments, then add the greens and stir-fry until they have mostly wilted. Splash in some soy sauce and stir-fry until wilted to your liking. Turn off heat and hold until you’re ready to eat. This is so good!

Recipes:

Broccoli, Beet and Feta Pasta [I plan on using cheddar since we have a bunch]
There are no real measured quantities here. This recipe is not that picky!

broccoli or broccolini, cut into bite-sized pieces
a few beets, topped, tailed, peeled, sliced, then cut crosswise into strips
penne pasta
onion, garlic, olive oil
toasted walnuts (optional)
feta cheese
salt and pepper

Cook beet strips in a saucepan of boiling salted water about 10 minutes or until tender. Boil your penne pasta according to package directions, adding the cut up broccoli for the last 2 to 3 minutes of cooking time so it will be done when the pasta is done. Meanwhile, in a large skillet, sauté onions and garlic in olive oil until translucent or even longer, if you like them a little caramelized. When the pasta/broccoli is done, drain well then add to skillet and stir/toss to combine. Add crumbled feta cheese to mixture and stir/heat until feta melts and makes it all creamy. Add salt to taste, and I like to add a generous amount of fresh ground black pepper. Drain and add beets last, stirring just to mix (so the beets’ color doesn’t overpower it all). Stir in optional toasted walnuts and serve.

Variation: as I mentioned above, I made up this recipe in January, when fresh tomatoes were not in the pantry, but since we have lots of them now, I bet it would be good to add diced fresh tomato (or halved cherry tomatoes), or substitute tomatoes for the cooked beets if you don’t like beets.

Red Cabbage Slaw
from Taqueria Gila Monster Restaurant
makes 3 – 4 quarts

1 head red cabbage
1 lb. carrots
1 bunch cilantro
1/3 C freshly squeezed lime juice
1/3 C apple cider vinegar
2 tbsp. salt
1 tbsp. ancho chili powder

Quarter and core red cabbage. Slice thinly by hand or in a food processor. Peel and grate carrots. Chop cilantro. Toss all ingredients. Let stand one hour before serving. Toss again. Serve as a garnish for tacos, as a side dish for sandwiches, or as a picnic salad.

White Cabbage Salad with Dates
also from ‘Organic & Wholefoods’
[definitely a recipe much different than others I’ve come across for cabbage!]

1 small white cabbage
1 garlic clove
1 small onion
1 ¼ C sour cream
2 tbsp. olive oil
3 tbsp. white wine vinegar
1 tbsp. honey
1 tbsp. tumeric
1 pinch cinnamon
1 tsp. ginger powder
1 tsp. cardamom
1 pinch cayenne pepper
white pepper
1 tsp. coarse salt
5 dates

Cut the cabbage into fine strips [I’d shred with a 1mm blade in my food processor]. Make a marinade from the cream, olive oil, vinegar, honey, and spices. Season well, and marinate the cabbage for 60 minutes.

Pit the dates, chop into small pieces, stir into the cabbage, check the seasoning, and serve.

KALE APPLE LEEK TOPPING
This makes a great topping for a buckwheat cracker (recipe below) or for a crepe.

1 leek, sliced into half moons
1 apple, grated
1/2 bunch of dino kale, chiffonaded [i.e. de-stem and stack leaves, roll them up like a cigar and thinly slice crosswise - Debbie]
1/4 C parsley, plus more for garnish
1 tbsp. ghee or butter
1 tbsp. olive oil
lemon juice to keep the apples from browning
1/4 C creme fraiche

1. Add the ghee or butter to a medium saute pan and heat over medium high heat. Add the leeks and saute for 5 minutes, until tender. Add the apple and saute for another 2 minutes. Add the kale and cook until just wilted. Turn off the heat and add the parsley, olive oil, and sea salt and pepper to taste.
2. Once the mixture has cooled, mince it and mix in the creme fraiche.
3. Fill a pastry bag with a large opening and pipe the mixture onto a buckwheat cracker. Top with a small dollop of creme fraiche and minced parsley.

The week after Thanksgiving is leftovers week since we don't get our next share until Dec 1.

Recipes:

LENTIL SOUP with BEETS and COCONUT MILK
Makes 2 to 2 1/2 quarts
This gorgeous fuchsia soup has a delicate flavor. Packed with nutrition, the spices aid digestion.

1 1/2 C French green lentils
5 C broth
one 4-inch piece of kombu seaweed (optional)
1 small sweet potato or yam or potato, grated
1 medium beet, grated
1 can coconut milk
1 tbsp. olive oil
1/2 C minced onions or leeks
1 tbsp. fresh ginger, minced or grated
1 tbsp. ground coriander
1 tbsp. ground fennel seeds
1 tsp. ground cumin
1/2 tsp. turmeric
1 tsp. sea salt
3-4 tbsp. chopped fresh cilantro, for garnish

1. Rinse the lentils and place them in a saucepan with the kombu and water. Bring to a boil, reduce the heat, and simmer until the lentils are tender, about 15-20 minutes.
2. Add the yam, beets, and coconut milk and continue simmering, stirring occasionally, until the beets and yams are tender, about 5 minutes.
3. While the lentils are cooking, saute the onion and ginger until the onion is translucent and tender. Add the spices and sea salt and cook over low heat, stirring, for 3 more minutes.
4. Add the onion mixture to the lentils and continue to simmer for 5-10 minutes. Taste and add sea salt if needed.
5. Garnish the soup with cilantro and serve.

FENNEL and LEEK SOUPServes 4-6

2 fennel bulbs
6 C stock (recipe follows)
2 medium leeks, white parts plus 1 inch of the green, chopped
1 small potato, thinly sliced
2 tbsp. olive oil or butter
1 onion, chopped
sea salt and pepper to taste
1/3 C cream, optional

1. Remove the tough layers of the fennel and use them in the stock, along with the 1 C chopped leek greens and the leek roots. Chop half of the fennel green and reserve.
2. Quarter the fennel bulbs, remove the core if tough, and thinly slice crosswise. Warm the oil in the soup pot and add the onion, fennel, leek, potato and 1 tsp. salt, plus 1 C of the strained stock.
3. Cover and stew over medium heat for 20 minutes, stirring occasionally.
4. Add the remaining stock and bring to a boil. Lower the heat and simmer, partially covered, until the fennel is tender, about 15-20 minutes.
5. Stir in the cream and the reserved fennel greens. Taste for salt and pepper and adjust if needed.

SAVORY "MAKI-SUSHI"-STYLE CABBAGE ROLL
Serves 4-6

For the roll:
1 small cabbage
4 large potatoes
3 pats* butter (about 1 tbsp.)
8 tbsp. grated parmesan cheese
1 egg
1/2 lb. spinach or other greens of choice
1 large carrot
nutmeg
sea salt
For the sauce:
half a lemon
4 tbsp. olive oil

*[a pat is about a teaspoon of butter sez Rebecca; I'm not capable of using butter in such small amounts, so I'd use a tablespoon per 'pat' myself, but Rebecca and I both agree: either way is fine ;-) - Debbie]

1. Remove the tougher outer leaves from the cabbage, if necessary, then wash and blanch the remaining leaves in boiling water. Drain well and arrange them in layers, forming a rectangle.
2. Boil the potatoes, press them through a potato ricer (or mash them), then put in a saucepan with 1 1/2 pats of butter. Season with salt and reduce the puree over low heat. Add some parmesan, a pinch of fresh grated nutmeg and an egg and stir until well blended.
3. Blanch the spinach or other greens for a few minutes, until tender. Dry out over a gentle heat with the remaining butter.
4. Boil the carrot whole in a little water (or steam) until al-dente but pierce-able with a sharp knife tip, then set aside.
5. Spread the potato puree evenly over the rectangle of cabbage leaves leaving a margin exposed; spread the greens on top of the potatoes, then finish off with the whole carrot. Wrap the cabbage leaves around the filling in the shape of a log roll like you would when making maki-style sushi, then wrap in a sheet of plastic wrap and place in the refrigerator for 2 hours to become firm.
6. Remove the roll from the refrigerator, remove the plastic, and slice crosswise into 1-inch (or so) thick slices; dress with lemon juice and salt.
7. Sometimes I roast garlic and mash it into the potatoes for extra flavor.
