Monday: Quinoa Salad

Tuesday: Taco Tuesday

Wednesday: Spinach and Chia Pancakes

Thursday: Eggplant and Cauliflower in Plum Sauce with Rice

Friday: Spaghetti Squash with Pesto

Saturday: Okra Fries and Ribs with Sweet Potatoes


Sunday (camping):

Lunch: grapes, hummus and pita, trail snacks

Dinner: Hot Dogs, Polenta, and Curry; smores


Monday (camping):

Breakfast: Eggs and Bacon, Oatmeal, coffee/hot chocolate

Lunch: Crackers, cheese, peanut butter

Dinner: Tuna/Fake Tuna and Hummus Wraps
